Cool Blueberry Salsa Recipe

July is National Blueberry Month. We love adding these blue gems to yogurt and our mid-afternoon protein smooothie or shake.  

Fun Food Fact 

Easy to eat as a snack and perfect in the morning, blueberries are considered a superfood thanks to their rich antioxidants and phytonutrient properties. Research has shown blueberries can improve overall cardiovascular and cognitive health and could help prevent certain cancers and diabetes.  Similar to kale, this super fruit is an excellent source of fiber, and is packed with vitamins A and C, potassium, and folate. In fact, two cups contain 14% of your Daily Value of fiber.

Not Just for Breakfast

Here's a salsa/dip recipe that proves blueberries are perfect anytime, even happy hour! This antioxidant rich salsa is full of flavor and is a perfect way to cool down those hot summer weekend nights. Serve this salsa with our kale + chia chips and you have yourself a super nutritious appetizer. 

Blueberry Salsa*: 

2 cups fresh blueberries, washed and sorted

1 jalapeño, seeded and finely chopped 

1 large red onion, chopped 

2 garlic cloves, chopped

1 tsp crushed red pepper

Directions: 

In a medium size bowl, crush the blueberries to a pulp using the back of a spoon. Combine jalalpenos, onions, garlic and crushed red pepper with the berry pulp. Set aside to allow ingredients to blend. (Add (1) tablespoon of Extra Virgin Olive Oil if desired.) Serve at room temperature.
